Ingredients List

For the Cookies

  • 1 ½ cups almond flour
  • ½ cup gluten-free oat flour
  • ¼ cup Kailo Nutrition Look Well: Vanilla-Chai Protein powder
  • ⅓ cup coconut sugar
  • ½ cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • 1 tbsp almond butter
  • 1 tbsp ground flaxseed (mixed with 3 tbsp water to create a flax egg)

For the Vanilla Protein Cream

  • 1 cup raw cashews (soaked in hot water for at least 30 minutes and drained)
  • ¼ cup Kailo Nutrition Look Well: Vanilla-Chai Protein powder
  • 3 tbsp coconut cream (scooped from a can of chilled coconut milk)
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • ¼ cup almond milk
  • ½ tsp lemon juice
  • Pinch of sea salt

How to Make It

  • In a large bowl, combine 1 ½ cups almond flour, ½ cup gluten-free oat flour, ¼ cup Look Well Vanilla Chai, ⅓ cup coconut sugar, 1 tsp cinnamon, ½ tsp baking soda, and ¼ tsp sea salt.
  • Create a well in the centre of the dry ingredients and pour in ½ cup melted coconut oil, 1 tsp vanilla extract, 1 tbsp almond butter, and 1 tbsp flaxseed mixed with 3 tbsp water (flax egg).
  • Mix until a dough forms. The dough should be slightly sticky but firm enough to handle. (If the dough isn’t sticking together, see notes below.)
  • Scoop out 2-tablespoon sized portions of dough, roll into balls, and flatten into cookie shapes on the baking sheet. For smaller cookies, use smaller portions of dough.
  • Bake for 10-12 minutes, or until the edges are golden brown. Allow to cool completely.

2. Make the Vanilla Protein Cream:

  • In a high-speed blender or food processor, blend 1 cup soaked raw cashews, ¼ cup Look Well Vanilla Chai, 3 tbsp coconut cream, 2 tbsp maple syrup, 1 tsp vanilla extract, ¼ cup almond milk, and ½ tsp lemon juice until smooth and creamy. Adjust the consistency with a bit more coconut cream if needed, but keep it thick. Taste and adjust sweetness if desired.

3. Assemble the Cookies:

  • Once the cookies are cooled, dollop the vanilla protein cream onto the bottom of one cookie. Place another cookie on top to create a sandwich, pressing gently to secure.
